1 Can chickpeas(If using canned, prepare the previous night, so the flavors marinate in the chickpeas)
(Optional: If you soak and pressure cook one cup of dry chickpeas with salt and chaat masala, it will be more flavorful)
SALAD INGREDIENTS
1/2 cup Cucumber unpeeled and cubed
1/2 small red onion finely chopped
1 medium Roma tomato finely chopped
2 tablespoons Chopped cilantro leaves to garnish
Tempering Recipe
2 cloves of grated garlic
2 Tbsp Canola oil
1/4 tsp turmeric
1 pinch mustard seeds
1 pinch cumin seeds
Heat oil in a small pan(I use a tempering pan- https://amzn.to/3YQjIBO)
Once the oil is hot, add the seeds and let them crackle for a few seconds.
Reduce heat and add the turmeric and garlic
Let it cook for a minute
Pour over the chickpeas.
SALAD DRESSING
1 tbsp Chaat Masala https://amzn.to/3Au122B
Salt to taste
3 tablespoons Olive oil(If using the tempering, omit the oil in the dressing)
2 tablespoons Lemon Juice
2 tsp sugar
Soak onions in lemon juice for a few minutes.
Mix all together and enjoy!
The salad can be made with or without the tempering. Add oil to the dressing if not using the tempering. Though I highly recommend the tempering.
